Well here is a recipe that you can whip up in under 2 minutes with things you probably already have in your cupboards. It’s super easy and full of goodness from real ingredients. A super quick healthy mayonnaise you can whip up in minutes
- 1/4 cup egg whites (approx. 4 medium eggs) if you can tolerate egg yolk, sub in 2 whole eggs instead
- 3/4 tbsp lemon juice or apple cider vinegar
- 1 tsp pepper
- 1 tsp salt
- 1 tsp dijon mustard
- 175 ml neutral tasting oil (preferably virgin avocado oil)
Add all the ingredients except for the oil and slowly blend with an immersion blender.
Whilst blending, very slowly add the oil.
Just let the blades of the blender skim the surface of the mixture
The mixture will start to emulsify and your mayonnaise is ready
