This is a super dessert that can be whipped up in a hurry. Forget about simmering the sauce for ages, blast it in the blender and its ready in under a minute. The coconut palm sugar gives this dessert a real caramelly sweetness whilst benefitting from all the health benefits of this sweetner.
- 100 g coconut milk powder
- 100 g coconut palm sugar
- 75 ml boiling water
- 1 tbsp melted coconut oil
- 2 dashes salt
- 150 g unsweetened dessicated coconut flakes
- 1 tsp ground cardamon
- melted coconut oil for greasing your palms
- coconut flakes to cover the laddoos (optional)
Put all the ingredients in a blender and blend.
Pour the caramel sauce, the dessicated coconut flakes and the cardamon powder into a sauce pan and heat on a medium heat.
The mixture will get tacky and pull away from the sides of the pan. This takes about 5 minutes.
Remove from heat and let it cool.
When it is cool to touch, grease your palms with melted coconut oil and divide the mixture into small round balls.
On optional step is to roll the ball into some coconut flakes
