We realised when we discovered our gluten intolerance, the options for gluten free foods on the market were very limited and the healthy options were even less. Although manufacturers eliminated gluten, they introduced a series of other elements, such as unhealthy starches and gums to replace the binding and bulking quality of gluten. We soon realised that these specialist foods, whilst omitting gluten, did a grand job of increasing our sugar levels.
So in 2012 we began exploring the idea of ‘Healthy Gluten Free.’
We have six base rules in our bakery which all our products have to comply. They are all:
-No White Sugar
-Contain no unhealthy gums
-Contain no unhealthy starches (like xanthum or guar gum)
-Contain no unhealthy fats
From these six base points we expanded our range to include low carb, vegan, sugar free and ‘made without nuts’ ranges.
